No spirit embodies as much history as rum. An aspect of the central economy of the western hemisphere for 300 years, it played an integral part in the American Revolution and the Communist revolutions of the 20th century.

Within the category of rum we see amazing diversity. From the driest, most austere transparent liquor to the funkiest, fullest bodied brown spirit imaginable, rum shows all that can be accomplished with the arts of fermentation, distillation, blending and barrel ageing.

In terms of cocktails, rum offers a great opportunity to study the art of drink making. In working through a simple evolution of drinks, from straight rum, to simple grog, to daiquiris, Collins, and punches we see the effects of different drink making tools and techniques on a base spirit which gives us a better handle on some of the variables that go into building good drinks.

Using a diverse collection of rums, and a mix of sweetening, bitter and aromatic components we'll have fun learning to make some of the real classics and developing our bartending chops in general.
