Grilling Tasty Veggies in the Summer

Every summer, I really enjoy when the grill comes out. You get the joy to hear the steaks sizzle and the beer bottles open to quench the thirst. Along with meat and alcohol, I try to get my veggies in as well. There's nothing better than grilled veggies straight from the grill.

Here's a simple way to prepare some grilled veggies at your next BBQ:

Ingredients:

  • Vegatables (asparagus, zucchini, mushrooms, bell peppers, etc.)
  • Olive oil
  • Salt and pepper
  • Lemon or lime

Instructions:

  1. Cut your veggies so their size is somewhat the same, in order for all the veggies to come at the same time.
  2. On a pan or large plate, cover your veggies with a nice drizzle of olive oil.
  3. Sprinkle salt and pepper generously over the veggies.
  4. Over a hot grill, place a sheet of aluminum foil on the grill so that the veggies don't fall through the cracks.
  5. Place the veggies on the foil for 3-4 minutes on each side.
  6. Take the veggies off once they're nicely marked with grill marks.
  7. Squeeze lime/lemon over the veggies while they're hot

I assure you that grilled veggies, whether it be zucchini or mushrooms, are a great addition to any BBQ event. Enjoy!
