How to make Sushi Rice
Posted by Scott Jacobson on February 12, 2009
If it's made well, sushi rice is awesome, with or without the raw fish. If it's not made well, it's terrible. So getting it right is important. The basic steps are as follows, per the Sushi Monsters. Check out the video for a walk-through:
Ingredients (for vinegar):
* 5T rice vinegar
* 5T finely granulated sugar
* 3t salt
Ingredients (for rice):
* 1 cup of short-grained sticky rice
Utensils:
* 1 large mixing bowl; 2 smaller bowls
* 1 sushi rice mixing bowl
* 1 rice cooker
* 1 fan
* 1 pan
Directions:
Making the Rice
1. Fill a large bowl with water.
2. Pour 1 cup of uncooked short-grained sticky rice into the bowl.
3. Wash the rice thoroughly.
4. Pour the dirty water down the sink (don't pour out the rice).
5. Repeat steps 3 and 4 until the water is clear when drained.
6. Pour the rice into a strainer and strain out all of the water.
7. Let the rice sit for 30 minutes in the strainer (over a bowl).
8. Put the rice in rice cooker and add std. amt of water.
9. While the rice is cooking, prepare the vinegar.
Making the Vinegar
1. Add the sugar, salt and rice vinegar together in the pan.
2. Put the pan/mixture on low heat until the sugar dissolves.
3. Transfer the mixture to a cool bowl.
Combining the Rice and Vinegar
1. Put the cooked rice into the sushi rice mixing bowl.
2. Add the vinegar mixture to the rice.
3. Fan the rice as you mix the vinegar into the rice (continue to mix for about 10 minutes).
You're done!
