Ever pass by a restaurant and wonder how the food is? Well now you can have a guided tour! Come enjoy the art of eating and cooking in community with NuCulinary. Our unique Dine, Learn and Cook Restaurant Series is a two-class series. For the first experience, we eat together at one of Naomi’s favorite restaurants and then we meet at NuCulinary’s new Seattle kitchen location to learn from the chef how to prepare the delicious dishes from the week before.

Join Naomi at Mashiko Japanese Restaurant in West Seattle to experience the only sustainable sushi restaurant in Washington and one in three in the US. Hajime Sato will provide us with a tantalizing journey into the realm of sustainable practice of a sushi bar, in other words, without detriment to the resources of the sea. We can make it easy for you to take part too. I promise, it will be delicious as we find new flavors and fish to take the place of the top 5 of today’s sushi bar, Blue Fin Tuna, Hamachi, Unagi, and Farm Raised Atlantic Salmon.

For dinner dining our in-season fish selection may include: Hawaiian Albacore; Black Cod; Sockeye Salmon; Kampachi, Arctic Chard; Steelhead Salmon
Sake tasting is included with dinner, additional beverages are no-host

Hands-on Cooking Class
We are combining our advance sushi classes into one and adding the sustainability feature. Hajime Sato will provide how to cut fish and make sushi rolls but with a green eye on the sustainability of our oceans and seafood stocks. Now up close, you can experience the sushi chef's technique in selection, preparation and cutting fish. You can keep the oceans healthy and eat your sushi too. Class discussion will cover hot topics such as: What defines sustainable practices and consumption: what fish and seafood should I choose and not to choose to eat; how to select; prepare and cut fish; how to eat fish and seafood sashimi style.

Menu includes the how-to's of fish selection, proper cutting techniques, and making rolls, sashimi, roll techniques for Rainbow roll, Hand rolls, Gunkan (nigiri shaped filled roll)

    I was definitely nervous at first, since the idea of making sushi has always intimidated me. But, I thought I would at least give it a try! The class was very interactive, easy to follow, and the instructors were so helpful. I can't wait to take the second class!

    If you are interested in the basics of making sushi - this class is fantastic. It's very hands on and well paced. You learn not only about the rolling process, but also a little history and etiquette around it as well. The class size was good (around 8 when I took it) so personal attention was given. I had a very enjoyable evening taking this class!
