Master Canner/Food Preserver Jessica Dally will be discussing and demonstrating home canning and food preservation. She'll be discussing the safe way to get your food from the garden into a jar and help preserve the fresh bounty of summer into the darker days of winter.

    This chick knows what it takes to make a safe can, and why that's so gall-dang important. Her lecture and demonstration goes through the materials and equipment you need and in what condition, how to obtain and follow a certified canning recipe, and even cans tomatoes as she speaks! All this spiced with the knowledge to answer every question, anecdotes of joy, irony and horror (all family safe, of course) and the strong admonitions necessary to instill a sense of respect for this now antiquated yet precise science.

    Jessica did a great job going over the basics of canning in a digestible (no pun intended) way. She covered a lot of information in an engaging format and put appropriate emphasis on safety. She was able to cater to our audience's diverse range of experiences with canning and fielded all sorts of questions well. She made it interesting and funny -- all of this in a fairly hot, crowded space!
