Meals are lighter and the summer ales are out. What is your favorite dish to prepare for the summer months?

Chinese style cold noodle dishes. So refreshing and light and full of flavor. The most basic is rice noodles with sesame paste and cucumbers. From there you can get creative and add sesame oil, carrots, hot sauce, and other raw veggies and spices.

During the summer months, the BBQ mindset comes to play for me. I like doing regular steaks (salt and pepper seasoning), roasted potatoes (salt, pepper, rosemary, olive oil), and roasted veggies. Any veggie like asparagus, zucchini, mushrooms, etc. Easy salt and pepper, and after roasted -- squirt lime or lemon over them. That's my most common meal during the summer months. :)

Definitely anything cooked outside. Whether it's ribs from the smoker, fish on the grill, or chicken on the rotisserie, getting out of the kitchen on a beautiful day is the best. A fresh salad from the garden and a glass of cold white wine or beer is the icing on the cake.

I agree. Can't beat charcoal grilled anything. Chili is great, too. I also like meals with lots of fruit, especially melons, and shrimp boils. Also camp food like open-fire brats and s'mores. If you'll excuse me ... I'm getting hungry!

I like a combination of the things above and then some! I love BBQ anything and fresh fruits. I also love fun light seafood dishes and tropical dishes like Lomi Lomi Salmon and Mango Salsa. YUM!
